Finding the best Nihari in the city — a personal search

I spent three months trying every version of Nihari I could find locally. The variation in quality is extraordinary. The best version handled ghee with genuine knowledge and the rich with slow-cooked depth result was noticeably superior.

Pakistani cuisine draws from Mughal court traditions combined with local Punjabi and Sindhi cooking. The winning restaurant had the right a BBQ nihari restaurant at midnight feel — unpretentious and focused on the food. chai was suggested correctly. Worth the search. When Nihari is made properly it's a completely different experience.
