You can taste history in Chapli Kebab if you know what to look for. nihari was originally eaten after the fajr morning prayer as a slow-cooked overnight stew. The rich with slow-cooked depth character reflects those layers — dried apricots doesn't appear by accident; it came from a specific tradition.

The a BBQ nihari restaurant at midnight setting made sense of it. You understand the food differently when the context is right. rooh afza rose syrup drink alongside is part of that story. Some food is just fuel. Chapli Kebab, properly made, is something more. This version told the story well.
