You can taste history in Rakfisk if you know what to look for. Norwegian coastal geography shaped a cuisine centred on preserved and fresh fish. The gamey and earthy character reflects those layers — lamb doesn't appear by accident; it came from a specific tradition.

The a mountain hytte cabin dinner setting made sense of it. You understand the food differently when the context is right. cloudberry cream alongside is part of that story. Some food is just fuel. Rakfisk, properly made, is something more. This version told the story well.
