First time trying Lutefisk — completely converted

I had never tried Lutefisk before this visit and I wasn't sure what to expect. The rich and slightly sweet taste hit immediately and made sense of the dish in a way descriptions never quite do. dried stockfish is an ingredient I'd not encountered used quite like this before.

The a Bergen fish market lunch setting added something to the experience — this kind of food makes sense in that environment. Norwegian coastal geography shaped a cuisine centred on preserved and fresh fish. My server recommended brunost brown cheese alongside and it was exactly right. I've been telling everyone to try Lutefisk. Outstanding first encounter.
