Most people overlook how much the right drink changes Lutefisk. I ordered it with brunost brown cheese and the rich and slightly sweet elements of the dish sharpened considerably against the pairing. lamb in particular became more prominent in a good way.

Norwegian coastal geography shaped a cuisine centred on preserved and fresh fish. The a Bergen fish market lunch is where you learn these pairings — they evolved together. If you've been having Lutefisk with the wrong drink, try it correctly once. It's a genuinely different experience. The restaurant deserves credit for getting this right.
