I ate Klippfisk at three different restaurants in the same week to compare. The results were illuminating. The use of cloudberry varied significantly — only one got it right. The clean and oceanic profile should be consistent but interpretation differs widely.

rakfisk fermented trout is an ancient preservation method still enjoyed at Christmas. The best version came from a Bergen fish market lunch, which felt authentic. cloudberry cream was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Klippfisk is larger than you'd think.
