Honest verdict on Klippfisk — good but not exceptional

Klippfisk here was solidly made — gamey and earthy without anything to complain about. brown cheese was present and handled reasonably. But something was missing from the depth that this dish should have.

rakfisk fermented trout is an ancient preservation method still enjoyed at Christmas. The a traditional Norwegian home atmosphere was pleasant enough. aquavit was available and a good suggestion. For a reliable version of Klippfisk this works. For an exceptional one, I'd keep looking. Three stars.
