You can taste history in Suya if you know what to look for. Nigerian cuisine varies between the Yoruba, Igbo, Hausa, and other ethnic culinary traditions. The deeply umami from fermented ingredients character reflects those layers — uziza leaves doesn't appear by accident; it came from a specific tradition.

The a family gathering setting made sense of it. You understand the food differently when the context is right. palm wine alongside is part of that story. Some food is just fuel. Suya, properly made, is something more. This version told the story well.
