First time trying Pepper Soup — completely converted
I had never tried Pepper Soup before this visit and I wasn't sure what to expect. The deeply umami from fermented ingredients taste hit immediately and made sense of the dish in a way descriptions never quite do. crayfish powder is an ingredient I'd not encountered used quite like this before.
The a Lagos buka local restaurant setting added something to the experience — this kind of food makes sense in that environment. Nigerian cuisine varies between the Yoruba, Igbo, Hausa, and other ethnic culinary traditions. My server recommended Chapman cocktail alongside and it was exactly right. I've been telling everyone to try Pepper Soup. Outstanding first encounter.
