Thukpa for a dinner party — went down extremely well
I made Thukpa for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The subtly numbing from timur profile was the main talking point — no one had quite experienced timur Sichuan pepper used that way before.
Newari cuisine of the Kathmandu Valley is a distinct and sophisticated subcategory. I explained the a Sherpa kitchen in the mountains context as I served it which helped people appreciate it fully. nimbu pani was what I offered alongside and it worked perfectly. Excellent dinner party dish — impressive without being inaccessible.
