Finding the best Momo in the city — a personal search

I spent three months trying every version of Momo I could find locally. The variation in quality is extraordinary. The best version handled black lentils with genuine knowledge and the earthy and warming result was noticeably superior.

Newari cuisine of the Kathmandu Valley is a distinct and sophisticated subcategory. The winning restaurant had the right a Newari restaurant feel — unpretentious and focused on the food. nimbu pani was suggested correctly. Worth the search. When Momo is made properly it's a completely different experience.
