Momo opened a door into a cuisine I'd previously known almost nothing about. The subtly numbing from timur flavours are unlike anything in my usual rotation and I mean that positively. dal bhat power for 24 hours is a trekking mantra reflecting how central the dish is to Nepali daily life. Understanding that context made the dish taste different — richer with meaning.

I learned that buckwheat is central to this cuisine's character, not just a seasoning. The a trekking lodge dal bhat setting was authentic and helpful for understanding what I was eating. butter tea completed the picture. A genuinely educational meal.
