Finding the best Dhindo in the city — a personal search
I spent three months trying every version of Dhindo I could find locally. The variation in quality is extraordinary. The best version handled mustard oil with genuine knowledge and the hearty and filling result was noticeably superior.
Newari cuisine of the Kathmandu Valley is a distinct and sophisticated subcategory. The winning restaurant had the right a Sherpa kitchen in the mountains feel — unpretentious and focused on the food. raksi grain spirit was suggested correctly. Worth the search. When Dhindo is made properly it's a completely different experience.
