I spent three months trying every version of Dal Bhat I could find locally. The variation in quality is extraordinary. The best version handled mustard oil with genuine knowledge and the earthy and warming result was noticeably superior.

dal bhat power for 24 hours is a trekking mantra reflecting how central the dish is to Nepali daily life. The winning restaurant had the right a Sherpa kitchen in the mountains feel — unpretentious and focused on the food. nimbu pani was suggested correctly. Worth the search. When Dal Bhat is made properly it's a completely different experience.
