First time trying Dal Bhat — completely converted
I had never tried Dal Bhat before this visit and I wasn't sure what to expect. The subtly numbing from timur taste hit immediately and made sense of the dish in a way descriptions never quite do. black lentils is an ingredient I'd not encountered used quite like this before.
The a Sherpa kitchen in the mountains setting added something to the experience — this kind of food makes sense in that environment. Newari cuisine of the Kathmandu Valley is a distinct and sophisticated subcategory. My server recommended raksi grain spirit alongside and it was exactly right. I've been telling everyone to try Dal Bhat. Outstanding first encounter.
