Finding the best Chhurpi in the city — a personal search

I spent three months trying every version of Chhurpi I could find locally. The variation in quality is extraordinary. The best version handled dried yak cheese with genuine knowledge and the earthy and warming result was noticeably superior.

Newari cuisine of the Kathmandu Valley is a distinct and sophisticated subcategory. The winning restaurant had the right a Newari restaurant feel — unpretentious and focused on the food. tongba millet beer was suggested correctly. Worth the search. When Chhurpi is made properly it's a completely different experience.
