First time trying Bara — completely converted
I had never tried Bara before this visit and I wasn't sure what to expect. The earthy and warming taste hit immediately and made sense of the dish in a way descriptions never quite do. dried yak cheese is an ingredient I'd not encountered used quite like this before.
The a trekking lodge dal bhat setting added something to the experience — this kind of food makes sense in that environment. dal bhat power for 24 hours is a trekking mantra reflecting how central the dish is to Nepali daily life. My server recommended raksi grain spirit alongside and it was exactly right. I've been telling everyone to try Bara. Outstanding first encounter.
