Best Kefta I've had — and I've tried a few

Having eaten Kefta at several restaurants over the past year, I can say this version is the best. The warmly spiced and aromatic quality is more pronounced here than anywhere else I've tried. ras el hanout is handled with real knowledge — you can taste the difference.

This is proper a desert camp dinner cooking, not an adaptation for foreign tastes. orange blossom water drink was the obvious choice and the combination was perfect. hospitality rituals including mint tea service are integral to the food experience. Would return for this dish alone.
