Finding the best Quesadillas in the city — a personal search
I spent three months trying every version of Quesadillas I could find locally. The variation in quality is extraordinary. The best version handled masa harina with genuine knowledge and the smoky and earthy result was noticeably superior.
Mexican cuisine is a UNESCO Intangible Cultural Heritage. The winning restaurant had the right a street taco stand feel — unpretentious and focused on the food. mezcal was suggested correctly. Worth the search. When Quesadillas is made properly it's a completely different experience.
