You can taste history in Quesadillas if you know what to look for. Mexican cuisine is a UNESCO Intangible Cultural Heritage. The smoky and earthy character reflects those layers — dried ancho chilli doesn't appear by accident; it came from a specific tradition.

The a street taco stand setting made sense of it. You understand the food differently when the context is right. agua fresca alongside is part of that story. Some food is just fuel. Quesadillas, properly made, is something more. This version told the story well.
