Finding the best Pozole in the city — a personal search

I spent three months trying every version of Pozole I could find locally. The variation in quality is extraordinary. The best version handled dried ancho chilli with genuine knowledge and the deeply aromatic result was noticeably superior.

Mexican cuisine is a UNESCO Intangible Cultural Heritage. The winning restaurant had the right a home kitchen on a Sunday feel — unpretentious and focused on the food. Mexican lager with lime was suggested correctly. Worth the search. When Pozole is made properly it's a completely different experience.
