Cultural discovery through Roti Canai
Roti Canai opened a door into a cuisine I'd previously known almost nothing about. The fragrant and aromatic flavours are unlike anything in my usual rotation and I mean that positively. Malaysian cuisine reflects the Malay, Chinese, Indian, and indigenous Orang Asli traditions of a multicultural society. Understanding that context made the dish taste different — richer with meaning.
I learned that pandan is central to this cuisine's character, not just a seasoning. The a Penang hawker stall setting was authentic and helpful for understanding what I was eating. Milo completed the picture. A genuinely educational meal.
