Beef Rendang opened a door into a cuisine I'd previously known almost nothing about. The richly spiced and coconut-sweet flavours are unlike anything in my usual rotation and I mean that positively. Malaysian cuisine reflects the Malay, Chinese, Indian, and indigenous Orang Asli traditions of a multicultural society. Understanding that context made the dish taste different — richer with meaning.

I learned that curry leaves is central to this cuisine's character, not just a seasoning. The a mamak 24-hour restaurant setting was authentic and helpful for understanding what I was eating. fresh sugarcane juice completed the picture. A genuinely educational meal.
