You can taste history in Kibbeh if you know what to look for. the cuisine shares roots with the broader Levantine tradition. The aromatic with herbs and spice character reflects those layers — sumac doesn't appear by accident; it came from a specific tradition.

The a Middle Eastern restaurant abroad setting made sense of it. You understand the food differently when the context is right. Lebanese wine alongside is part of that story. Some food is just fuel. Kibbeh, properly made, is something more. This version told the story well.
