Spice level warning — Kafta is not what I expected
I underestimated Kafta. The aromatic with herbs and spice description didn't prepare me for the reality. tahini brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.

Kafta for a dinner party — went down extremely well
I made Kafta for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The aromatic with herbs and spice profile was the main talking point — no one had quite experienced tahini used that way before.

Kafta exceeded every expectation
I went in with low expectations — I'd had mediocre versions before. What I found was Kafta made with real commitment to za'atar and technique. The fresh and citrusy result was more complex and satisfying than anything I'd had before.

Street food Kafta — the authentic version
The best Kafta I've ever had came from a street stall, not a restaurant. The fresh and citrusy intensity was completely different — more direct and uncompromised. seven-spice baharat blend was used without hesitation, the way it should be.

Ingredient appreciation — what makes Kafta special
What sets Kafta apart is the handling of tahini. In lesser versions this is treated as a background note. Here it's central and the bright and balanced result shows it. I've started buying it to cook with at home after this experience.

Kafta as comfort food — exactly what I needed
Some dishes exist to comfort and Kafta is absolutely in that category. The bright and balanced quality works on something almost primal — you feel the warmth of it immediately. seven-spice baharat blend does work that no substitute can replicate.

Restaurant review — Kafta that actually delivered
I'm sceptical of any restaurant claiming to do Kafta well, having been disappointed often enough. This one delivered. The bright and balanced base was authentic and the use of pine nuts showed real knowledge.

Traditional versus modern Kafta — which wins?
I've now had Kafta prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises za'atar in the way Lebanese hospitality is expressed through abundance on the table. The bright and balanced character is more pronounced and direct.
The modern interpr…

Comparing Kafta across three restaurants — an honest verdict
I ate Kafta at three different restaurants in the same week to compare. The results were illuminating. The use of pine nuts varied significantly — only one got it right. The aromatic with herbs and spice profile should be consistent but interpretation differs widely.
