Finding the best Escovitch Fish in the city — a personal search
I spent three months trying every version of Escovitch Fish I could find locally. The variation in quality is extraordinary. The best version handled coconut milk with genuine knowledge and the boldly spiced result was noticeably superior.
Jamaican jerk cooking traces to the Maroon communities who preserved meat with allspice and chilli. When Escovitch Fish is made properly it's a completely different experience.
