I spent three months trying every version of Bammy I could find locally. The variation in quality is extraordinary. The best version handled thyme with genuine knowledge and the rich and coconut-sweet result was noticeably superior.

Jamaican jerk cooking traces to the Maroon communities who preserved meat with allspice and chilli. The winning restaurant had the right a Kingston jerk pit feel — unpretentious and focused on the food. ginger beer was suggested correctly. Worth the search. When Bammy is made properly it's a completely different experience.
