You can taste history in Spaghetti Carbonara if you know what to look for. Italian cooking is intensely regional with little crossover between provinces. The fresh and herbal character reflects those layers — San Marzano tomatoes doesn't appear by accident; it came from a specific tradition.

The a Neapolitan pizzeria setting made sense of it. You understand the food differently when the context is right. limoncello after the meal alongside is part of that story. Some food is just fuel. Spaghetti Carbonara, properly made, is something more. This version told the story well.
