I ate Sabich at three different restaurants in the same week to compare. The results were illuminating. The use of tahini varied significantly — only one got it right. The bright and fresh with herbs profile should be consistent but interpretation differs widely.

Shabbat and holiday meals follow religious traditions that shape the food served. The best version came from a fusion restaurant mixing Mediterranean traditions, which felt authentic. mint lemonade was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Sabich is larger than you'd think.
