Cultural discovery through Mirza Ghasemi

Mirza Ghasemi opened a door into a cuisine I'd previously known almost nothing about. The sweet-sour with pomegranate flavours are unlike anything in my usual rotation and I mean that positively. Iranian cuisine has a 3000-year recorded history with influences on Arab, Turkish, and Central Asian cooking. Understanding that context made the dish taste different — richer with meaning.

I learned that pomegranate molasses is central to this cuisine's character, not just a seasoning. The a traditional Iranian home dinner setting was authentic and helpful for understanding what I was eating. fresh pomegranate juice completed the picture. A genuinely educational meal.
