Some dishes exist to comfort and Ghormeh Sabzi is absolutely in that category. The rich and saffron-gilded quality works on something almost primal — you feel the warmth of it immediately. pomegranate molasses does work that no substitute can replicate.

Iranian cuisine has a 3000-year recorded history with influences on Arab, Turkish, and Central Asian cooking. There's something about the a communal sofreh tablecloth feast context that reinforces the comfort effect. rose water sharbat alongside is the traditional way and it makes complete sense. I come back to this dish when I need something dependable and restorative.
