I made Palak Paneer for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The tangy and vibrant profile was the main talking point — no one had quite experienced tamarind used that way before.

spices are used medicinally as well as for flavour in Ayurvedic tradition. I explained the a family home kitchen on a weekend context as I served it which helped people appreciate it fully. nimbu pani lemon water was what I offered alongside and it worked perfectly. Excellent dinner party dish — impressive without being inaccessible.
