Finding the best Dal Makhani in the city — a personal search
I spent three months trying every version of Dal Makhani I could find locally. The variation in quality is extraordinary. The best version handled tamarind with genuine knowledge and the warmly spiced and aromatic result was noticeably superior.
Indian cuisine varies enormously by state, religion, and climate. The winning restaurant had the right a wedding feast setting feel — unpretentious and focused on the food. lassi was suggested correctly. Worth the search. When Dal Makhani is made properly it's a completely different experience.
