First time trying Dal Makhani — completely converted

I had never tried Dal Makhani before this visit and I wasn't sure what to expect. The tangy and vibrant taste hit immediately and made sense of the dish in a way descriptions never quite do. tamarind is an ingredient I'd not encountered used quite like this before.

The a north Indian restaurant abroad setting added something to the experience — this kind of food makes sense in that environment. spices are used medicinally as well as for flavour in Ayurvedic tradition. My server recommended chai tea alongside and it was exactly right. I've been telling everyone to try Dal Makhani. Outstanding first encounter.
