I spent three months trying every version of Töltött Káposzta I could find locally. The variation in quality is extraordinary. The best version handled Hungarian wax peppers with genuine knowledge and the creamy and savoury result was noticeably superior.

Hungarian cuisine was shaped by nomadic Magyar traditions mixed with Ottoman and Habsburg influences. The winning restaurant had the right a family Sunday lunch feel — unpretentious and focused on the food. soda water spritzer was suggested correctly. Worth the search. When Töltött Káposzta is made properly it's a completely different experience.
