Halászlé rarely gets the international recognition it deserves. The richly paprika-spiced complexity is genuine, not simple, and the technique involved in using sweet paprika correctly takes real skill.

Hungarian cuisine was shaped by nomadic Magyar traditions mixed with Ottoman and Habsburg influences. I encountered it first in a lakeside restaurant on the Balaton and that context helped me understand it properly. Pálinka fruit brandy is the natural accompaniment and the combination makes the case for the dish. If you haven't explored this cuisine seriously, Halászlé is the dish to start with.
