Goulash rarely gets the international recognition it deserves. The deeply flavourful complexity is genuine, not simple, and the technique involved in using onion correctly takes real skill.

Hungarian cuisine was shaped by nomadic Magyar traditions mixed with Ottoman and Habsburg influences. I encountered it first in a traditional market stall and that context helped me understand it properly.
