Most people overlook how much the right drink changes Baklava. I ordered it with ouzo and the bright and lemony elements of the dish sharpened considerably against the pairing. Kalamata olives in particular became more prominent in a good way.

Greek cuisine has influenced the entire Mediterranean culinary tradition for millennia. The a taverna by the Aegean sea is where you learn these pairings — they evolved together. If you've been having Baklava with the wrong drink, try it correctly once. It's a genuinely different experience. The restaurant deserves credit for getting this right.
