I ate Sauerkraut at three different restaurants in the same week to compare. The results were illuminating. The use of caraway seeds varied significantly — only one got it right. The hearty and deeply savoury profile should be consistent but interpretation differs widely.

German bread culture is extraordinarily diverse with over 300 officially registered varieties. The best version came from a Sunday family roast lunch, which felt authentic. Radler shandy was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Sauerkraut is larger than you'd think.
