Most people overlook how much the right drink changes Pkhali. I ordered it with Georgian amber wine and the tangy and herbal elements of the dish sharpened considerably against the pairing. sulguni cheese in particular became more prominent in a good way.

Georgia claims one of the world's oldest continuous wine-making traditions dating back 8000 years. The a traditional Georgian supra feast is where you learn these pairings — they evolved together. If you've been having Pkhali with the wrong drink, try it correctly once. It's a genuinely different experience. The restaurant deserves credit for getting this right.
