I went in with low expectations — I'd had mediocre versions before. What I found was Quiche Lorraine made with real commitment to Dijon mustard and technique. The buttery and aromatic result was more complex and satisfying than anything I'd had before.

French cuisine is a UNESCO Intangible Cultural Heritage. The a brasserie lunch was exactly right for this kind of eating. Champagne was offered as the natural choice and it elevated everything.
