Honest verdict on Bouillabaisse — good but not exceptional
Bouillabaisse here was solidly made — rich and refined without anything to complain about. Dijon mustard was present and handled reasonably. But something was missing from the depth that this dish should have.
the terroir philosophy links food to its region of origin. The a countryside auberge atmosphere was pleasant enough. a digestif of Calvados was available and a good suggestion. For a reliable version of Bouillabaisse this works. For an exceptional one, I'd keep looking. Three stars.
