Holiday memory — Shiro that transported me back
I first ate Shiro on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the deep and earthy quality I remembered. niter kibbeh spiced clarified butter was handled correctly — something most restaurants here get slightly wrong.
Ethiopian communal eating with no utensils from a shared injera is a social and hygienic tradition. It was the an Addis Ababa restaurant memory that I was really chasing and this recreated it. tej was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
