I spent three months trying every version of Misir Wat I could find locally. The variation in quality is extraordinary. The best version handled niter kibbeh spiced clarified butter with genuine knowledge and the richly buttery result was noticeably superior.

Ethiopian communal eating with no utensils from a shared injera is a social and hygienic tradition. The winning restaurant had the right a traditional coffee ceremony setting feel — unpretentious and focused on the food. tej honey wine was suggested correctly. Worth the search. When Misir Wat is made properly it's a completely different experience.
