Street food Kitfo — the authentic version
The best Kitfo I've ever had came from a street stall, not a restaurant. The tangy from fermented injera intensity was completely different — more direct and uncompromised. mitmita bird's eye chilli was used without hesitation, the way it should be.
Ethiopian communal eating with no utensils from a shared injera is a social and hygienic tradition. The an Ethiopian diaspora restaurant abroad setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. fresh juice was sold right next to it. Don't wait to find the 'right' restaurant. Find the street version first.
