Decent Kitfo — nothing more, nothing less
Kitfo at this place was fine. The tangy from fermented injera flavour was there but not distinguished. fenugreek was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

Underwhelming Kitfo — expected more
I was looking forward to Kitfo here based on the reputation. The reality was disappointing. The tangy from fermented injera character that makes this dish special was muted — either from shortcuts with niter kibbeh spiced clarified butter or from scaling up production at the expense of quality.

The Kitfo I grew up eating — memory as a review
I grew up eating Kitfo and have strong opinions shaped by memory. The version here triggered that recognition in the first bite — the richly buttery was right, fenugreek was handled the way it should be.

Kitfo exceeded every expectation
I went in with low expectations — I'd had mediocre versions before. What I found was Kitfo made with real commitment to niter kibbeh spiced clarified butter and technique. The tangy from fermented injera result was more complex and satisfying than anything I'd had before.

Home cooking attempt — Kitfo from scratch
I spent an afternoon making Kitfo from scratch following a traditional recipe. Getting fenugreek right was the main challenge — it's not as straightforward as it looks. The tangy from fermented injera result was rewarding once I got it right.

First time trying Kitfo — completely converted
I had never tried Kitfo before this visit and I wasn't sure what to expect. The tangy from fermented injera taste hit immediately and made sense of the dish in a way descriptions never quite do. niter kibbeh spiced clarified butter is an ingredient I'd not encountered used quite like this before.

Kitfo as comfort food — exactly what I needed
Some dishes exist to comfort and Kitfo is absolutely in that category. The intensely spiced and complex quality works on something almost primal — you feel the warmth of it immediately. teff injera does work that no substitute can replicate.

Best Kitfo I've had — and I've tried a few
Having eaten Kitfo at several restaurants over the past year, I can say this version is the best. The deep and earthy quality is more pronounced here than anywhere else I've tried. berbere spice blend is handled with real knowledge — you can taste the difference.
