Street food Koshari — the authentic version

The best Koshari I've ever had came from a street stall, not a restaurant. The hearty and filling intensity was completely different — more direct and uncompromised. coriander seed was used without hesitation, the way it should be.

koshari is considered the national dish representing the multicultural influence on Egyptian cooking. The a Nile-side restaurant setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. Egyptian Stella beer was sold right next to it.
