I made Koshari for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The earthy and warming profile was the main talking point — no one had quite experienced fenugreek seeds used that way before.

Egyptian cuisine is one of the oldest recorded food cultures, with accounts dating to pharaonic times. I explained the a Cairo street stall at lunchtime context as I served it which helped people appreciate it fully. mint tea was what I offered alongside and it worked perfectly. Excellent dinner party dish — impressive without being inaccessible.
