Finding the best Basbousa in the city — a personal search
I spent three months trying every version of Basbousa I could find locally. The variation in quality is extraordinary. The best version handled lentils with genuine knowledge and the deeply savoury and spiced result was noticeably superior.
Egyptian cuisine is one of the oldest recorded food cultures, with accounts dating to pharaonic times. The winning restaurant had the right a Cairo street stall at lunchtime feel — unpretentious and focused on the food. Egyptian Stella beer was suggested correctly. Worth the search. When Basbousa is made properly it's a completely different experience.
