Holiday memory — Fanesca that transported me back

I first ate Fanesca on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the fresh and citrusy quality I remembered. mote hominy was handled correctly — something most restaurants here get slightly wrong.

Ecuador's position on the equator gives it extraordinary biodiversity of ingredients from coast, highlands, and Amazon. It was the a traditional home lunch memory that I was really chasing and this recreated it. chicha de jora was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
